F&B Challenge, concept for waste and sustainability management in 2025

Description:
The Food & Beverage Chair at Ecole hôtelière de Lausanne is hosting a F&B Challenge focusing on waste and sustainabiity management in 2025. This challenge also in relation with other hospitality schools: Insitut de tourisme et d’hotellerie Québec, Westminster Kingsway central London’s College and Institut Paul Bocuse. The participants are asked to create a 2-minute video on either: 1) Waste reduction in back-of-house restaurant operations (kitchen) or 2) Waste reduction in front-of-house restaurants operations (service). We have an international jury (respresntative of the faculty of each school participating and of waste management experts) to choose the 2 winning teams. The goal of this challenge is for students to envision how waste can be managed and reducted in the future within the food and beverage industry. Through this challenge we hope to create awareness among the students, faculty and waste managment experts.
