WHAT will be done

Description:

Do you imagine the potentiality of circular economy principles applied into the restaurant and catering sector? If no, let’s join to our cooking show laboratory at the Food Lab of the University of Gastronomic Sciences organized within the Life FOSTER project.

During the laboratory it will be possible to see:

  • how a leader company in the catering sector (Bibendum) is changing its approach to menu design and engineering from a linear to a circular one;
  • how is possible to optimize the kitchen flow of raw material and energy by redesign the recipes and menu;
  • how much food and money it is possible to save by adopting circular economy through the demo of the web application Food Waste Flow Balance design by the University of Gastronomic Sciences within the LIFE Foster project.
