MUNICIPALITY DRIVEN -B2B INITIATIVES FOR FOOD UPCYCLING

Description:
The Food loss and Food Waste Prevention Unit of the Municipality of Halandri creates in collaboration with the companies Bread BC and Anastasiou Brewery food upcycling products. These products came about as a result of the Unit’s ongoing research on food upcycling that started in March 2024 with the action “Cook Smart and Save Food” in the context of the European FoodRUs Program.
Through the process of the first ongoing food upcycling experiment using the spent brewery grain, generated as a by-product by a microbrewery, bakery products (cookies, bread, bars) were produced by Bread BC. In addition, new beer using bread leftovers from Bread BC is also explored by Anastasiou Brewery, as reverse upcycling process.
Spent brewery grain, the used malt of the brewery, has valuable constituents and its correct and beneficial use may lead to the production of superfoods.
In the action that is going to take place on November 18, the products will be sampled with a taste test, while the attendees will tour the production areas of the bakery and the brewery. The event will involve participants from various food producing enterprises of the Municipality, such as bakeries, cheese making companies etc. A brain-storming session will be held during the event, aiming at identifying additional upcycling possibilities through B2B synergy.
Through this activity, the Food Loss Prevention Unit wants to show how strong B2B synergies sponsored by the Unit’s initiative can lead not only to food waste reduction, but also to the creation of new and superior types of existing ones.
